Atkins Diet Recipes: Low Carb Flax Bread
Additional contact methods: Twitter: twitter.com IM: Ask One of the questions I get quite often is how do you give up bread on the Atkins Diet, and my point is you don’t have have to. I learned this bread from Book, my Atkins Diet Drill Sergeant about 4 years ago. It is perhaps more English Muffin than bread or bun tasting, but it is good tasting. It’s tastes like a course ground wheat muffin, perfect for a sausage or egg. Book’s Flax Bread: 1 TBS Butter 1 Large Egg 2 TBS Flax Meal (Golden Flax if possible) 1/2 tsp Baking Powder Soften butter. Mix all ingredients together. Microwave for 2 minutes. Makes 2 Servings. Calories: 105 Calories, 9.75g Fat, 2.4g Carbs (2g Fiber), 4g Protein Note: I have started posting collab videos for the FitnessManswers Channel. @iiScorpius It might be your flax. My self-ground golden flax is a lot less bitter than Bob Red Mill ground flax meal. How to improve what you have? I have added a bit of splenda and cinnamon butter glaze on top for homemade cinnamon bread.

@bowulf Thanks for the quick reply! After posting I did some more googling, I bought a bag of brown flax seeds and a coffee grinder today. Milled the seeds myself. I’m paranoid now as not sure if they could have gone rancid but unlikely as there was still a year left on expiration and as I said ground them myself or could this be the standard taste of the brown variety? I’m going to throw the left overs in the bin, are the golden seeds much better? I don’t want to give up just yet

@librangirl1 Actually this is Induction friendly. Flax is allowed on Induction 1-2 TBS per day.

@khanjibran Yep, exactly right. A cheap $9 coffee grinder from Wal-mart serves the purpose well.

I need some flax seed and a grinder badly. The grocery store I go to (Market Basket) sells Atkins friendly wraps but they are pretty expensive (five dollars for two packages) and not really induction friendly. The wraps have flax in them as well. But HALF a wrap is four net carbs! Ouch! If I could make my own bread, I may save some carbs and some cash. Thanks for the vid. :)

microwaves destroy the vitamins. have you tried baking it instead? good results?

Tried this with regular (darker) flax meal – horrible. You were so right not to use the regular on this. I’ve got some golden flaxmeal coming from Vitacost this week, so I’ll do it your way. I’m sure it’ll be great. (To those who have trouble finding ingredients: Don’t overlook online sources. You can find ANYTHING on the internet.)

@Vittoria10538 The dark flax definitely has more of a taste than does the lighter stuff. I completely agree about the online sources. Just search and you can find it. Whether or not you want to pay the shipping is another story. :-)

@zaaz369 There are those that bake these in muffin cups, but that is too much work for me. I am not convinced on the dangers of microwaves, but if you are, you can certainly change the cooking technique.

@bowulf Vitacost and Netrition have flat rate shipping of around $5 (free if you spend over a certain dollar amount). I couldn’t mail that stuff for anywhere near as low a price. If you drive (I gave that up 13 years ago when I moved to NY), and you’re lucky enough to find a local store that even carries these things, factor in the cost of driving there & back, and you’re really paying only the difference between the shipping and the price of your gas. So you can do pretty well having it sent.

@Vittoria10538 Oh I agree… Just there are vendors (especially those selling perishable items like bread or ebay vendors) where the cost of the shipping is double the cost of the item itself. Amazon and netrition don’t have that problem.

Thanks for showing how to make the bread…How many slices can you have at a time.
What kind of oil did you use for the egg plants..?

@Florrie71 Just starting out you are 1 TBS of Flax per day, so half the recipe (1 slice). If you are still having problems with regularity, you can add the second slice.
For cooking oil, I prefer peanut or coconut oil, but I will use corn oil if I am short of the other ones.

@Lansola Yes, although start with one slice per day first. You are allowed 1TBS of Flax for regularity, and then can add another if you need it.

what other bread recipes you made is okei to eat during induction? thanks. btw, i love your mock danish and no bake cheesecake recipes. i lost 8 lbs on my first week. i’ve also been doing 3 to 5 miles walk daily.

@jinxlexus01 This is only recipe I know of that is Induction friendly. After Induction there are more option, like the one I posted here, but given only Induction acceptable ingredients, this is the only bread. There are Revolution Rolls made with egg whites that can also be used for buns on Induction, but it’s been years since I made them.

Thanks so very much for this recipe. I make this flax bread often to prepare sandwiches. I have not missed the regular whole wheat bread since I came across your video. I would like to try making a flax pizza crust with this recipe. I hope it works. Have you ever given it a try?
