Low-Carb Dieting and Baked Goods

One of the things that those of us who follow a Low-Carb WOE (Way of Eating) one of the things we miss the most is baked goods. Sadly, it’s baked goods that often got us into the situation where we have to work to lose weight.

But, with the popularity of Low-Carb dieting and the creation of the Glycemic Index some very creative people and companies have come up with ways to make baked goods and still keep them with low carbohydrate gram counts.

Now we can have bread, rolls, cookies, cakes, just about anything that you’re missing from the way we used to eat. In addition, these items have become much easier to find. From the individual ingredients to boxed mixes there’s a wide variety of choices to make. There’s something for everyone.

There’s no need to feel as though you are depriving yourself on your low-carb eating plan. Just think, you can even have pizza!

Do you have any low calorie/low carb bread recipes?

I want to try my hand at making my own bread. Does anyone have any good low calorie/low carb recipes? Since it’s just me, a recipe that makes a mini loaf (or something like 1 lb. or less in weight) would be perfect. My favorite kinds are French, Italian, and whole wheat.

I have a bread machine so recipes for that would be great!

Question about lower-carb flour for baking?

I’m diabetic and whole-wheat flour doesn’t seem to be any gentler on my blood sugar than white flour, so I’m experimenting with other, lower-carb, lower-glycemic flours such as coconut and/or bean flours. Of course, these often have less-than-satisfactory results when baking because of the lack of gluten. So I’m wondering: has anyone ever tried mixing these kinds of flours with some vital wheat gluten, and what kind of results did you see? Also, what proportions would I use when mixing? I’m not sure how much of wheat flour is gluten, and though I might be able to figure that out after an hour or so of painful mathematics, I was hoping maybe someone else already did…! Thanks much for your help.

Gluten Free Low Carb Coconut Bread

www.healthyfitmom.com I created a low carb grain free recipe that my kids and I enjoy. Here is the recipe 1 cup of ground dessicated coconut 1/4 ground golden flax meal 5 pastured organic eggs 1/4 cup of coconut oil 1/4 teaspoon of baking soda 1/4 teaspoon of salt 2 drops of non bitter stevia Preheat oven to 350 degrees. Mix together coconut, flax, salt and baking soda. Mix well enough so most of the lumps are gone. Add wet ingredients (eggs, stevia, coconut oil). Mix well again. Place batter in a buttered pan. Bake for 30-35 minutes until knife comes out clean.

Carbquik Recipe: Cornbread

Cornbread

Ingredients:

2 cups Carbquik
6 tablespoons cornmeal
2 eggs
Artificial sweetner equal to 1/2 cup sugar
1 cup half and half (or cream)
1/2 cup butter, melted

Directions:

Preheat oven to 400 degree

Mix all ingredients together and pour into un-greased pan.

Bake for 20 minutes or until done.

Servings: 8
Per Serving: 271 Calories; 20g Fat; 9g Protein; 20g Carbohydrate; 14g Dietary Fiber; Net Carbs: 6g

This bread is a MAJOR no-no for my low-carb diet. 2 Corrections to the video: 1) The dough rises 3 times, not twice. 2) My mom corrected me via email stating: “THE BATTER BREAD RECIPE WAS FROM MY PILLSBURY BEST OF THE BAKEOFF COOKBOOK THAT I BOUGHT WHEN I WAS 22 YEARS OLD”. My whole life it was “Mom’s Batter Bread”, so that’s what I’m calling it, since she always made it for holidays. RECIPE: Mom’s Batter Bread 3 bread pans: 9x5x3 or 10 x 3.5.x2.5 1 c. butter 1 c. sugar 2 c. hot scalded milk 4 slightly beaten eggs 1 egg, beaten to brush tops of loaves 4 tsp. vanilla 2 tsp. salt 2 packages dry yeast softened in ½ c. warm water 8 c. flour Scald milk in a large pot. Add butter and sugar. Stir until it cools off a bit and is warm (so your eggs will not cook) Add 4 slightly beaten eggs, salt, vanilla and yeast Gradually add flour, 1 cup at a time, stir well after each addition. Dough will be sticky, so you may have to butter your spoon. Butter the inside of the pot so dough does not stick to it as it rises. Cover with a clean towel and let it rise in a warm place for 1 HOUR Punch down dough and let rise again for 45 Minutes Separate into 3 WELL GREASED pans (I used butter). Cover and let rise again for 45 minutes. Preheat oven to 350 degrees Brush loaves with beaten egg Bake 25-30 minutes Cool for a half
